To make kombucha its as easy as boiling water, add sugar, add tea, cool, add SCOBY, cover and wait a few days. Kombucha Mushroom Tea is a simple beverage made with tea (camellia sinensis), sugar and the SCOBY (probiotic bacteria and yeasts). Brian Nummer (Utah State professor) wrote a very informative article on the FDA kombucha Brewing guidelines. The CDC and the FDA and Cornel Universit y Food Science all found Kombucha Mushroom Tea to be safe when properly fermented. Matter of fact kombucha is almost fool-proof. Kombucha tea has been made for thousands of years. I am presenting this article simply to address some concerns that every home brewer should be aware of.
